Parsnip Rice

Nori Roll with Parsnip Rice

1 parsnip, peeled and chopped
1 tablespoon lemon juice
2 tablespoons scallions, minced
2 teaspoons minced ginger
1/4 teaspoon salt
2 nori (seaweed) sheets
1/4 cup cucumbers in matchstick slices
1/4 cup avocado in matchstick slices

  • Place the parsnip into a food processor and process until it becomes the consistency of rice.
  • Add the lemon juice, scallions, ginger and salt to the food processor
  • Place Seaweed (Nori) sheet on board and put Sushi Maker 1/3 of way up from bottom of sheet
  • Fill 1/3 up the frame with processed parsnip mix
  • Make channel for filling with press bar
  • Lay in matchstick vegetables and top with parsnip mix
  • Press and lift press bar up and off and roll up your Parsnip roll
  • Wet edge to seal the sheet of Seaweed (Nori)
  • Let your roll rest for 5 minutes and then cut into 6 equal parts
