Parsnip Rice
Nori Roll with Parsnip Rice
1 parsnip, peeled and chopped
1 tablespoon lemon juice
2 tablespoons scallions, minced
2 teaspoons minced ginger
1/4 teaspoon salt
2 nori (seaweed) sheets
1/4 cup cucumbers in matchstick slices
1/4 cup avocado in matchstick slices
Place the parsnip into a food processor and process until it becomes the consistency of rice.
Add the lemon juice, scallions, ginger and salt to the food processor
Place Seaweed (Nori) sheet on board and put Sushi Maker 1/3 of way up from bottom of sheet
Fill 1/3 up the frame with processed parsnip mix
Make channel for filling with press bar
Lay in matchstick vegetables and top with parsnip mix
Press and lift press bar up and off and roll up your Parsnip roll
Wet edge to seal the sheet of Seaweed (Nori)
Let your roll rest for 5 minutes and then cut into 6 equal parts
